Zürcher Geschnetzeltes

Ingredients:

  • 1 Tbsp Avocado Oil (or any other high-heat cooking oil)

  • 1# Chicken Thighs, boneless, skinless, cut in cubes

  • 1# Mushrooms, finely sliced

  • 1 large Shallot, finely chopped

  • 3ea Garlic Cloves, minced

  • 1/2 cup White Wine

  • 1 pint Heavy Cream

  • 1 cup Chicken Stock

  • 1/2 cup Parsley, chopped

  • Salt to taste

  • Black Pepper, freshly ground

Directions:

  1. Preheat a large pan on medium to high heat and add cooking oil

  2. Add the chicken and sear until golden brown - take out of the pan and set aside

  3. Add more oil and turn the heat to high

  4. Add mushrooms to the pan and cook out all the liquid - reduce the heat to medium

  5. Add the shallots, garlic, chicken with all it’s juice and a good amount of salt and cook until shallots are soft

  6. Deglaze pan with white wine and reduce until there is almost no liquid left

  7. Add heavy cream and chicken stock and cook for 5-10 minutes until the chicken is fully cooked through

  8. Finish with parsley and freshly ground black pepper

  9. Serve with rice or pasta
